Why do you use a club with loft for a chip shot when you don't need to go over anything why not use a 7 or 8 iron.

Yes, how do I get the ball to spin back when it lands on the green or for that matter to continue to roll forward?
How do I know which club to use for clearing the bunker? A pitching wedge, sand wedge, etc.? I always seem to come up short and land in bunker.
