If I look behind the Ball when hitting with an iron , How do I keep from hitting the ground first

I have found that, if I hit behind the ball, I hit the ball thin. What works for me is looking in front of the ball, which makes me hit the ball in a descending strike which makes better contact with the face of the club and makes the ball fly better for me.
Why do instructors use tees to demonstrate shots when the struggle we have is off the turf. Somewhat misleading?
